Fermentation in oak with indigenous yeast, sur lie aging for 12 months in oak. No use of finings or filters.

Tasting notes : a golden-yellow color robe with green reflections, a complex and expressive nose of peach, apricot, citrus with toasty notes. In the mouth, roundness and fineness, minerality, with a long and aromatic finish
Food pairing : thin-fleshed fish such as pike or char, crayfish, foie gras, white meat
Tasting temperature : between 9 and 12 °C
Cellaring : 8 to 10 years
